I can’t even believe it, today is my fifth blog post in the last five days. Hopefully I haven’t bombarded you! I just have all these great Christmas recipes that needed sharing, and there’s really no point in sharing Christmas recipes after Christmas! Today’s recipe is another SUPER simple recipe. It’s the BEST caramel corn puff corn recipe.
There’s actually a funny story behind this one. A few years ago I went to a women’s night at church where my friend Maria brought this amazing caramel corn. Everyone kept calling it “Maria’s recipe” and I assumed maybe it was a special family recipe. The next day I messaged her asking if it was “top secret” or if she’d be up for sharing it with me? She laughed when she told me it’s printed right on the bag of puff corn! So she shared her “secret” recipe with me by telling me to go and pick up a bag and read the back!
Anyways, this has become one of our family’s favorites, and if your brand of puff corn doesn’t have the recipe on the back I’ll share it with you! Or maybe you’ve just never looked for it like I never had!
Caramel Puff Corn Recipe
- Prep Time: 10 mins
- Cook Time: 45 mins
- Total Time: 55 minutes
Ingredients
- 2 Bags Puff Corn
- 2 c. butter (not margarine)
- 2 1/2 c. brown sugar
- 1 1/3 c. light corn syrup
- 2 t. baking soda
Instructions
- Heat butter, brown sugar and light corn syrup together until melted. Add in baking soda.
- Pour mixture over puff corn in large roasting pan
- Cook for 45 minutes at 250, stirring every 15 minutes
- Pour onto baking sheets to cool, spreading out as much as possible

What kind of puff corn do you use??
Old Dutch, but that’s just what they sell locally. It comes in a blue bag. Now you’ve got me craving it!!
Mine burnt after baking one round. What did I do wrong?
Oh no! I actually just made it yesterday following these same instructions and it turned out great. For some reason though when I cook it in our lower oven it burns easier, in our upper oven it cooks perfectly. Maybe try shorter increments, like 5-10 minutes stirring in between?
My family and friends couldn’t get enough of this recipe.
I actually made 8 batches for the holidays.
I think a litt of peeps were making it as well, cuz I couldn’t find the puffed corn anywhere. I finally found one morning and wiped out the store.
