Like the rest of America, we’ve been trying to recover from a December filled with treats and sweets, and get back on track with eating healthy. Sometimes eating healthy is hard. We love green smoothies, but keeping fresh fruits and veggies on hand and constantly washing and prepping them is a lot of work. One thing that we do that makes eating healthy easier is to make green smoothie cubes ahead of time.
To make this smoothie cubes we just toss handfuls of kale, spinach, and green apples into the food processor, with a bit of apple juice. The apple juice just helps make it a pourable and spreadable consistency.
Then we spread this mixture into ice cube trays.
We try and make lots of these in the summertime, when fresh produce is cheap and easily available. After about a day in the freezer, the cubes can be easily popped out with a butter knife and stored in a freezer bag.
Then when we’re ready to make a smoothie, it’s as simple as throwing in some frozen fruit, along with a few of these green smoothie cubes.
Typically I also add in about 1/2 c. of yogurt and 1 c. of apple juice or orange juice.

I put two green smoothie cubes into each of these smoothies and the boys can’t even taste anything other than berries! In our smoothies we try to get 3-4 cubes in, but the smoothie definitely gets greener and not quite as fruity.
