Unwrapped Pork Burrito Bowl

Ingredients

  • Pork Butt Roast
  • 3 cans Coca-Cola
  • 2 c. brown sugar
  • 2 cans diced green chilis
  • 2 T. Garlic Powder
  • 1 large can enchilada sauce
  • 1 Eat Smart Southwest Salad Kit
  • Corn Salsa
  • Green Salsa
  • Instant Brown Rice

Instructions

  1. Place pork roast, 1.5 cans Coca-Cola, 1 c. brown sugar, and 1 T. Garlic Powder in crockpot and turn on low for about 8 hrs or until pork is ready to shred.
  2. Pour sauces out of crockpot.
  3. Shred Pork Roast
  4. Add 1.5 cans Coca-Cola, 1 c. brown sugar, 1 T. Garlic Powder, Green Chilis, and Enchilada Sauce. Cook until warm.
  5. Serve warm pork over rice and salad, topped with corn salsa and green salsa
