Nicoise Salmon Salad

Ingredients

  • Dressing:
  • 6 T. brown mustard
  • 6 T. olive oil
  • 4 T. white wine vinegar
  • 4 T. honey
  • dish of salt
  • Salad:
  • 4 salmon filets
  • 1/4 c. olive oil
  • 2 t. lemon juice
  • 1 t. salt
  • 1 t. black pepper
  • 1 pound small red potatoes
  • 4 hard boiled eggs
  • 1/2 pound green beans
  • 4 c. baby spinach
  • 2 c. grape tomatoes, sliced
  • 1/2 c. sliced red onions
  • 1/2 c. sliced kalamata olives
  • 1/2 c. bacon bits
  • 1/3 c. crumbled feta cheese

Instructions

  1. Marinate Salmon in Lemon Juice, Olive Oil, Salt, and Black Pepper for 15 minutes
  2. Boil potatoes and cut into quarters
  3. Hard Boil Eggs, peel and slice into quarters
  4. Cook Green Beans
  5. Grill salmon until done
  6. Mix dressing ingredients
  7. Toss Spinach, Potatoes, Green Beans, Tomatoes, RedOnions, Kalamata Olives, Feta, and Bacon Bits with dressing. Garnish with Egg Slices and top with Salmon Filet
