Four Bean Southwest Salsa (Texas Caviar)

Ingredients

  • Beans
  • 2 cans pinto beans
  • 2 cans blackeyed peas
  • 2 cans black beans
  • 1 can garbanzo beans
  • Veggies
  • 2 pound bag frozen corn
  • 2 large jars chee chees chunky salsa
  • 1 diced red onion
  • 1 red pepper diced
  • 1 can diced jalapeños
  • Sauce
  • 3/4 c. apple cider vinegar
  • 1 1/2 c. sugar
  • 1/2 c. oil
  • 1 t. garlic salt
  • 1 t. pepper
  • 1 T cold water

Instructions

  1. Combine all beans, drain and rinse.
  2. Add Veggies to beans.
  3. Boil all sauce ingredients, cool and then pour over bean and vegetable mixture.
  4. Refrigerate and Enjoy!
