Chipotle Copycat Corn Salsa Recipe… The Best Corn Salsa Ever.

Ingredients

  • 2 pounds corn or about 8 ears corn cut off the cob
  • 1 red onion
  • 4 jalapeños
  • 1 c. cilantro
  • 4 T. lime juice
  • 2 t. salt

Instructions

  1. Cut corn off of ears and cook, then cool
  2. Chop onion and jalapeños with food processor
  3. Add cilantro to food processor and chop finely
  4. Mix chopped peppers into corn
  5. Pour lime juice and salt over mixture and stir
  6. Serve with Chips
