Crockpot Mexican Pork- Cafe Rio Pork Recipe



  • Pork Butt Roast
  • 3 cans Coca-Cola
  • 2 c. brown sugar
  • 2 cans diced green chilis
  • 2 T. Garlic Powder
  • 1 large can enchilada sauce


  1. Place pork roast, 1.5 cans Coca-Cola, 1 c. brown sugar, and 1 T. Garlic Powder in crockpot and turn on low for about 8 hrs or until pork is ready to shred.
  2. Pour sauces out of crockpot.
  3. Shred Pork Roast
  4. Add 1.5 cans Coca-Cola, 1 c. brown sugar, 1 T. Garlic Powder, Green Chilis, and Enchilada Sauce. Cook until warm.
  5. Serve over rice. Top with fresh corn salsa, green salsa, sour cream, and cheese.
  6. Recipe freezes well.
