One of my favorite meals to make for friends when I bring them a meal is Poppyseed Chicken. This also freezes and reheats easily, making it a wonderful freezer meal.

Poppyseed Chicken
- Prep Time: 20 mins
- Cook Time: 40 mins
- Total Time: 1 hour
Ingredients
Scale
- 4 Chicken Breasts
- 2 Chicken Boullion Cubes
- 8 oz. Sour Cream
- 1 Can Cream of Chicken Soup
- 2 T. Poppy Seeds
- Salt and Pepper
- 1.5 Tubes Crushed Ritz Crackers
- 1/2 c. melted Butter
Instructions
- Preheat oven to 350
- Boil Water and add Bouillon Cubes
- Dice Chicken and Cook in Boiling Water
- Drain and Reserve 1/2 c. water
- Mix Sour Cream, Cream of Chicken, Poppyseeds, and Reserved Water. Add Chicken.
- Spread into 9×13 casserole pan
- Crush ritz, mix with melted butter and top casserole with Ritz mixture.
- Cook for 30-40 minutes until bubbly.
- Serve over rice.
I deliver it with the Ritz crumble and rice in separate bags. This way the ritz doesn’t get soggy.
Of course I made one for us to eat for dinner. This is also an awesome freezer meal.
So it does’t look that appealing over rice, but it sure tastes good! Everyone always loves and appreciates it!
