You know that one thing you HAVE to get everytime you go to a certain restaurant because you can’t replicate it at home? That’s me with Chipotle’s Corn Salsa. It doesn’t help that the closest Chipotle is over 300 miles away. You know the saying, “Distance makes the heart grow fonder”? That’s the truth. Until Now. Just this week I’ve perfected my Chipotle copycat corn salsa recipe. I don’t know if it’s a good thing or a bad thing! All I know is since I’ve figured it out we’ve been going through chips like nobody’s business.
One of my favorite things about this recipe is that I was able to get ALL the ingredients at my local North Dakota farmers market!
I also love that you can do all the chopping in the food processor, eliminating dishes and hassle. I start out by chopping the peppers and onions.
I chip until they’re in small-ish pieces.
Then I toss in cilantro by the handfuls.
In the mean time I cut corn off the cob and cook and cool it. Or if corn isn’t in season you could totally buy, cook, and cool frozen corn. Once it is all mixed together I squeeze lime generously over it and sprinkle it with salt. This results in the most delicious corn salsa ever.

Ingredients
- 2 pounds corn or about 8 ears corn cut off the cob
- 1 red onion
- 4 jalapeños
- 1 c. cilantro
- 4 T. lime juice
- 2 t. salt
Instructions
- Cut corn off of ears and cook, then cool
- Chop onion and jalapeños with food processor
- Add cilantro to food processor and chop finely
- Mix chopped peppers into corn
- Pour lime juice and salt over mixture and stir
- Serve with Chips
I love eating it with chips, but it would be SO good on tacos or in burritos. Or with quesadillas. Or served over rice. Or I would probably eat it by the spoon-full.

Can you make this ahead of time, if so how long would it keep in the fridge?
Yes! I think it tastes best in the first 3 days, but I’ve made it and eaten it up to a week later and it was still good!
